I have had a pretty nice 350watt psu (I think +12v 15a) and Its done fine... nice and stable. But my uncle recently gave me a 300watt psu. It doesnt say exactly the voltages and stuff, but it has a sticker on it that says "Max: +12v 18a" .
If I switched out mine with the one that has +12v 18a, could I possibly overclock my vid card more with better stability, or should I keep my 350watt?

IMHO, the more power you have, the better. I don't see any reason to go down in size, if you feel like you need to replace your PSU then buy a good brand with more power. Probably not less than 400w.
