I retired a high-end Dell server about 5 years ago. Its been sitting in storage (inside climate controlled) since its retirement, I bought it new about 7 years ago. I have another server at a data center that needs to be replaced and I'm thinking about redeploying it. I plan on replacing the drives, but other than that I'm looking for suggestions on what else I might want to check/replace. I've Googled the topic and really haven't come up with much information. Any help would be greatly appreciated.

Welcome to Bleeping Computer.

Other than blowing it out, probably not much.  Maybe replace the CMOS battery.  Other than that I don't know there is much else you would "need" to do.
