I want people to be able to sign up for email alerts, and I want an email to go out automatically every time I publish a new post.

I do not want people to have to register. I just want them to type in their email address anonymously and be automatically subscribed.

Can I accomplish this using Mailchimp?

Looking at the below page, it does look like it is possible to use MailChimp to customize a form to collect just email addresses

It's quite easy with Jetpack.

With Mail Chimp you can use their RSS to Email feature.
