I am finding that when e-mail are dragged and dropped in to subfolders (used for organisation) within the inbox, that without any obvious pattern, some of the mails are disappearing. On checking with the webmail version of this account that the same e-mails are still there.

Outlook is set up as IMAP.  Show only subscribed folders has now been changed to unticked without any change.

Any suggestions as to how to fix this issue?

Many thanks

scanpst.exe fixes a lot of problems like this. Here's a "how to".
