Hi

I am a bit confused here. Are you trying to add a pin to your account, or are you trying to convert your account from Microsoft account to a local account?

Looking at the directions, it is trying to get your account converted to a local account, and then back to (a different) Microsoft account.

Continue on to convert it to local account first.

Here, you need to fill out the password (not the pin), and then it will give you the option to continue

You don't use an email address when using a LOCAL account. For LOCAL accounts all you need is a password if you set one up for the LOCAL account. The only time you will use an email address to sign in is if you created an account using a Microsoft email address (Hotmail, @live.com, @outlook.com, or @msn.com. There may be more domains used by Microsoft)

OR
You create an account using a NON-Microsoft account (your ISP mail, gmail, etc.)

So are you wanting to use the LOCAL account or one which requires sign in by email address?

You don't need an email address with a LOCAL account.

When a LOCAL account is created there is NO box for an email address.

This is the create a local account screen. Note that an email address is NOT asked for.

Hello again

You must type in the name and password. Set it up temporarily, since you are "separating" the account from your Microsoft account. Then, click Next and sign out and sign back in. After your account is converted to a local account, we can convert it back into the Microsoft account. Although I don't have screenshots, I can give you the instructions to convert it into the Microsoft account afterwards:

Go to Settings app

Click on Accounts

Make sure that you are on the Your Account on the sidebar

Click on Sign in with a Microsoft account instead

Type in your password (not pin), and click Next

Type in your email and password for the Microsoft account, and click Next
