What are you trying to change it to?

 

If you're looking for black text on white background I'd start looking at the high contrast settings via Personalization and then customize one of those.

Again, what are you trying to replace the black with?  There are multiple things you might do.

 

Here are two examples from Color in the Personalization settings:

You could also choose one of the High Contrast themes, e.g., High Contrast White:

and customize the colors within that theme.

 

What you need to do depends entirely on what, precisely, the end result is that you're looking for.
