Searching and Displaying Day of the Week

Hi guys, 

I have three questions about Windows 10.


1) The first is the big one: I work with tens of thousands of files in a deep directory structure, and in Windows 7 I just used the search from the start menu to access 95% of them. (windows key + type key words). In Windows 10, it defaults to searching the web - and when I manually click on "search my files" it gives preview information on each file, meaning only a few files appear on the screen. As a result, I have to do a lot of clicking and scrolling for what I used to be able to handle from the keyboard, and it's slowing down my productivity dramatically.


Does anyone know how to switch the windows key search back to how it was in Windows 7?


2) The second is that Microsoft Excel seems to take a REALLY long time to load, often 3-7+ seconds. Before upgrading, it generally took 1-2 seconds. Any ideas what caused the change?


3) The last thing is a minor nuisance, but very annoying: I cannot get the day of the week to display in the task bar unless I bring it up to triple height. In Windows 7, it displayed at double height. I think the difference is caused by the action center and, yes, it's annoying enough to me that I'd rather disable the action center than lose the displayed day of the week :) Any ideas how I can fix this?
