Hello just setting up a Surface Pro and wondering what settings i should use (of course, everyone has different preference) and if there if there is anything I should be aware of?

After looking at the options in the customize tab.... do the Express Settings basically just have everything set to on that would be in there?

I don't want to limit the functioning Windows 8 by turning off settings and disabling things, but at the same time I don't want to share everything, sort of want it be as minimal as possible.

Or overall, is there nothing really of great concern with these settings?

Hi Star_Slight :)

To be honest, this is down to your personal preferences. Personally, I use the "Customize" option and leave pretty much every settings as they are except the one to use Bing as the default search engine in Internet Explorer and I don't allow Windows to track down my location. It's your choice, there's no "best" option here. The best choice is the one you want to make.
