hi lads any help would be great, how do i go about setting up print management on server 2008 and server 2012 and then how do i add printers to this

2008 - It is a role in Server Manager. Once that is loaded, drill down to your printer/printers. Right click on Printers in the left column and click add. You can deploy with group policy there as well. If you want to add servers to a single location for deployment, use the tool in Administrative Tools.

i cant find it in server manager do i have to add the role or should it be there?

You have to add the role. When a server is first set up there are no roles or features installed.
