Where did the ribbon go?

I'm using Excel 2007 and I notice that the Ribbon had disappeared and was replaced with headers. I was able to restore it by going to the quick launch toolbar but had never gone there before  so I don't know what had caused it. Is there a shortcut key to minimize the ribbon that I might accidentally have clicked on?  Actually, I hate the ribbon and wish they simply used the format they had that was menu driven in Excel 2000. It was a lot easier to find what I was looking for. Eventually, I am able to navigate the ribbon and usually find what I need but it's a big pain, cumbersome and seems non-intuitive.

Ctrl+F1 will minimise the ribbon.
