Pretty sure I'm leaning toward a Boston Butt roast coming up this Saturday dusted with my Magic Dust rub and cooked over hot charcoals laced with apple wood. :bananas:

caintry_boy, that ranks right up at the top of my list of Best Things in the World to Put on the Dinner Table.

I put mine on the Brinkman smoker, over charcoal. Wood used is dependent on what I have on hand.
It stays on the smoker all day, as long as the water pan has water in it the meat will not dry out.

My next grilling might be a couple of whole chickens with a can of beer stuck up their butts, done on the smoker.

I have a very big regular grill which I don't use much anymore since we've become empty nesters. For burgers, steaks and things that don't need to stay on the smoker for hours the smoker can be also used as a regular grill.

For me it'll be some Lamb chops (round bone) or if I can get a nice whole red snapper I'll pick that first.

It's official. The 2 whole chickens with cans of beer stuck up their butts will be on the Brinkman smoker this weekend.

I did a whole red snapper a couple of weeks ago. Marinated it in soy sauce, garlic, ginger and sesame oil first. Turned out great.
