When someone else's personal calendar has multiple entries at any particular time, only one of these shows up in the Scheduling Assistant, as far as I know, and I’m wondering if it’s possible to see all entries.

If the other person has marked those events as private, they won't be shared. As long as the calendar is shared to you and you have been added as an attendee, you should be able to see all of them.
