I've been running into many problems using Symantec Enpoint Protection. Does anyone else know of any other encryption software that I should look into using?

You can try TrueCrypt  free open-source disk encryption software. You can encrypt whole drive, partition or even just create encrypted container, similar like you can encrypt folder in OS X with disk utility but more secure.
