Office, PDF and JPeg files content getting changed to ASCII characters

We have a global share that all of our users have write and some have modify access to.  Today one of our techs found that most of the PDF, JPEG and office files on that server had been changed, exe files are untouched.  The files all contain ascii text:

enough times to emulate the original file size.  File modify dates remain unchanged.  Has anyone seen this behavior before?  Whatever this is it just seems to be malicious.

 

It's a 2008 R2 Enterprise Server, we know it's not the source, we're trying to figure out a way to track down the user that is flipping the files on us as well.  So any help that can be provided would be greatly appreciated.

 

Edit:  We have back-ups, so we are covered on that.  We just want to understand what we are up against and the best way to fight it.
