I'm running an HP Pavilion a1330n with 1gb of RAM Specs can be seen here http://speccy.piriform.com/results/OZhtcLlWWSY2ooMOfEVT2zm

The cpu is a AMD Athlon 64 3800+

I'm thinking of either using windows server 2003 or 2008 but I don't know which one.

Support for Server 2003 ends Next year. If your going to use the server in a functional network you should use 2008R2. Depending on the roles needed and network size you can use Small Business Server.
