Here's one. The ADVANCED SCREEN PROPERTIES window, as existed since Win95-B.

This screen allows all Screen Objects to be re-colored according to the User's Demands/Desires.  Historically, this screen has written to umpteen registry entries.

Those registry entries still exist in Win8, but this screen does not, so there's no easy access to someone changing the Color Bar or Scroll Bar's color.

Of course, the Start Menu folder structure still exists, too, but again, Ballmer's wisdom excludes User Customization from any of these individualized UI options.  "You must use a Theme!  We can sell you themes!  We can't let users decide for themselves without squeezing more money from them!!"  - Steve Ballmer.
