Removing renderable text from pdf

Is there a function in Adobe Acrobat (or some other software) that will allow me to automatically remove renderable text from PDF? I downloaded a PDF copy of an online textbook that I want to subject to OCR. The problem is that the pages that contain renderable text actually have the time stamps of when I downloaded the PDF. I know that I can remove this manually by using the "Edit Document Text" tool and deleting it, but this is too tedious to do for a 500+page textbook. Any help is appreciated! Thanks.
