Any one got a application to check for hidden processes, last used applications and such things?

My UserAssist tools shows you all the data from the UserAssist registry keys. These key keys register programs you launch via Windows Explorer.

Windows XP here.Question - does UserAssist just list what's started by windows explorer only, or does it include things started by Any other application or service?

I always delete all my userassist keys when i see them collect there :)

No, only Windows Explorer. And also if you use Windows Explorer via the open dialog of another application.
