Email Log For Outlook?

I would like to know if there is a history log for Outlook (2003) pop/smtp activities that I can review? Or a way to log the activities for review, if there isn't a system already in place that I am unaware of. I have XP Home and XP Pro both with SP2. Any suggestions would be appreciated.

What sort of information would you need to log?

A run down of all the sent mail (not the one from the sent mail folder, but the actual activity) would be nice. I know that excu-droids in bigger companies log employee email activities. But I was looking for a simpler way of reviewing the activity.
