After I copy a link from the website that I want to use as a quick reference in an email can I rename it to the title of the document it represents?

Most email clients and some web based mail do have a way to do what you want.

In an email client, there is generally an Insert Hyperlink.

Most of these will allow you to paste the address in one field, then give it a descriptive title in another field.
