Did you delete the MESSAGES in the folders?

When I clicked on Inbox and Sent folder names, DELETE was grayed out-there is no way I can delete the folders themselves.

I was able to delete a folder I created. When deleting the folder a warning popped up:

Are you sure you want to permanently delete the "Test" folder?
This action cannot be undone.

For another user created folder, I was asked if I wanted to remove the folder and send it to deleted items.

Have you looked in Deleted Items to see if it's there?

If the FOLDERS have been deleted, you can create a new Inbox and Sent folder and hope that mail will be put into them.
