Taskbar Problems

Why is Window7 setting up this way? I do not like this new taskbar format. I want the traditional format that keeps all the icons to the left next to the Start tab. I have attached a photo (W/ another seperate issue I'll create a different post on). As you see the programs open and replace the icon, staying in place in the order they were in before opening the programs. This is why the unopened Windows Mediaplayer is in between the OUTLOOK and IE tabs instead of locked into the left (Changing lock the taskbar doesnt fix this). Besides for this unorganized arrangement I also do not like how program takes the place of the icons when opened because you cannot then open up an additional program. For instance, if i wanted to launch another WORD document I cannot do so from the taskbar because Word is already opened; it can also be seen from this picture that if I wanted to open up another IE from the taskbar I cannot do so either.
