these are all free (whee!)

ebuddy, chat client similar to pidgin
tweetdeck or hootsuite, for facebook and twitter addicts (the regular facebook app is good too)
foursquare or gowalla, geo locations are the way of the future! (foursquare is supported in tweetdeck btw)
pandora (i second that motion), if you like music it's the only way to go
movies (by flixster), local theater movie times, tailers and rotten tomato reviews, win win and win
barcode scanner (by ZXing Team), scan a barcode on something you own, then you'll see why it's awesome :)
pdanet or easytether lite, for tethering a laptop to get internet

games:
angry birds
unblock me
labyrinth lite
paper toss
sudoku free

I agree with the handcent
I prefer last.fm over Pandora much more accurate on genre
Lookout is a great AntiVirus if you lose your phone you can gps it and make an alarm sound from a pc
And a must must have is advanced taskiller!
As for paid apps I am a fan of the nes and snes emulators
