W7 on a new build.

I'm just about to load Windows 7 Ultimate on to a new build. Here's the build;

I've never used W7 and never used 64-bit, so I'd welcome some advice .

The plan is to partition one HDD for Windows 7, use the remainder of that drive for software, backup and storage and then to use the second drive to backup everything in the first.
What size should my O.S. partition be ? I'm not using RAID at all.

Secondly, this machine is for home sound recording via an external soundcard. Should I disable the onboard sound in the BIOS now, before loading W7 or can I simply disable it in Windows afterwards ?

Lastly, any BIOS setup tips for the kit listed above ?
