I usually leave the ipod on charge even though it has probably already charged. Can this cause damage through overcharging?

No problem, if everything is working properly.

Once the Li battery is fully charged the charging circuit cuts out. You'll be running on external power, if you use it to play something, but you won't be continuously charging it.
