Problems with page view on IE 8

Microsoft recently prompted me that there were new "Critical" updates that needed to be installed to my computer. I did not read them all individually and consequently did not know that IE8 would be installed to replace IE7. After the installation, I was greeted with a screen explaining all the benefits of the
new IE8 including compatiability view, etc. I have no problem with the IE8 except I never know what the format of the page that opens will be. Sometimes it opens just like I had it set up with IE7 (address line, toolbars, search, etc. displayed at the top). Sometimes it opens with everything at the top hidden. Sometimes it opens with everything visible at the top but then it disappears on its own. I have tried it with the compatiability view both on and off with no difference. I can click on "Page" and then "New View" and it will change from whatever format it is currently displaying. I want it to stay with all the toolbards, menus, search boxes, etc. at the top all the time. Is there a way I can do this or will I have to uninstall IE8 and go back to IE7?
