Updating Files Between 2 Computers

I am getting a laptop computer ready for my work, one that will be largely offline. I will be making changes (and additions and deletions) to files constantly and am looking for a (more or less) sure-fire method of not accidentally writing old files over new when I sync both computers. I will keep all the files in one directory the same for both computers, and all my changes will occur in it.

Obviously I can use an external HD or even a flash drive (the whole folder is hovering around 1 GB of stuff at the moment) to go back and forth, but what I really want is perhaps a better system so I don't screw up. Perhaps there are some new technologies, or programs that will safeguard errors.

And yes, I will be doing frequent back-up on these files so in case an error does occur, I can go back and fix it. And I won't be online with the laptop, so online back-up won't work.

How do people do this sort of thing?
