MS OFFICE Help - Default page layouts?

here's my question. i have office 2003 installed and i wanted to modify/add settings to the default page sizes in MS word and MS Excel. i wanted to delete the rest of the sizes keeping letter size and A4 size then adding a custom 8.5"x13". how will i able to do that?
