I'm new here, and I would like to know the basics on building a simple linux box. I've built a number of windows boxes, but I'm a gamer and we tend to throw simplicity "out the window."

Is this "simple linux box" for gaming also...If so, dual boot with windows will be your best bet.
Since I'm not a gamer and am not as experienced with linux as I'd like to be, all I can suggest is to go with Nvidia for your graphics...Most "friendly" distros (such as Ubuntu, Mandrake, Fedora Core, SUSE, etc. etc.) will detect most hardware.
If this is just a "tinker around" box, just about any hardware will do as long as it meets the minimum specs for the distro you choose.
