Hi, I'm sure I saw one of Microsoft's tutorital for Win7, where they showed you how you can run a Virtual OS in this case it was XP, but i can't find this anywhere even on the Ultimate version, the closest I can find is the XP compatibilty mode.

Was this additional software i was perhaps seeing, if so does anyone have a link to it.

XP Compatibility mode IS "Virtual" ... install the KB update, then install the actual XP Compat mode.

You'll be able to set things up from there. It's all explained on the XP Mode webpage.
