I am trying to remove programs from my computer however the add/remove area only populates with just a few programs on my computer.
? is how do I get the add/remove area to populate all programs?

Some programs might not be uninstall-able.
What programs are you looking to uninstall?

Some programs have there Uninstall file in their program file. For XP go to Start, All Programs. Then see if that application is listed there. Click on it and see if it has an uninstall file there.
