Which would you say is better for security and privacy?

How long do north-american email providers (e.g. aol, yahoo) keep logs of deleted accounts' emails?

Side questions: For how long can Canadian, US, UK websites store Ip-adress of visitors going by the law in those countries?

How long do shopping sites like eBay keep logs of user activities?

Has there been compiled any lists of good, trustable web proxies? (ignore this question if its illegal)
