Basically, I would like to remote desktop from an Ipad "into" a particular program on a Windows(XP or 7) machine. Instead of RDP'ing into the machine and seeing the desktop or whatever application is running, I want it to go into the program only and not allow it to be minimized or switched out of. Hope that makes sense. Any help is appreciated.

Not sure it can be done without client/server software. I will ask the other advisors.
Edit: There is other software available like Gotomypc for IPAD it is my understanding however that this is still using RDP.
