I left my PC running over night with the disk defragmenting my C drive. It has been running for 8 hours and it still has not completed in the morning. How long is it suppose to take?

There can be a few reasons. Number of files, size of disk, time between defrags.
Before running disk defragmentation use the Task Manager and terminate all processes which are not absolutely required. Antivirus programs should also be disabled during the defragmentation process as a scheduled scan might interrupt the defragmentation process. Also, a screensaver that activates during disk defragmentation will slow the process down considerably as they consume resources.

Do not run other or leave other programs either while defragging.

What if disk defragment never stops? How long should I wait for it to defrag before clicking cancel?

Did you make sure there was plenty of space free before starting the defragmentation? Should have 30%+ free.
Get rid of all but the last System Restore file b4 starting.
