I have an HP xt375 notebook that I want to upgrade from 2x256mb to 2x512mb. I called HP and the tech told me that this computer can handle a max of 1GB (also confirmed by several websites), and that I "should be ok with" PC2700, because it would just revert to the lower speed that my computer would run it at (PC2100). I bought PC2700 RAM (it was cheaper than 2100), and it doesn't work. I've tried various arrangements of old and new RAM in each of the 2 slots, but all that happens is the lights flash, it reads the CD drive, but displays nothing on the screen. The backlight doesn't even turn on. Are there any tricks I can try to get this ram to work, or should I just return it and get PC2100?

Where did you buy the RAM?
Typically, returning it is no problem since reliable vendor guarantee suggested RAM modules will work.

I got it off ebay, but there is a return policy (and I've already been talking to the seller). I want to try it in my mom's computer, though, so there might at least be some use for it.

One thing that you have to keep in mind when shopping Ebay... caveat ēmptor!
There are reputable places online that sell RAM as a business, not as a side show, who are reputable and will sell at competitive prices. Like Chewy, I too like Crucial.
