Hi Extrodewise.
Below is a list of Photoshop sites that contain tutorials for nearly all versions of Photoshop. 1 or 2 I still visit today.
If you want strictly ver.7 tutorials, use the search function within the sites themselves. (Example)
You'll find however, that much of what you can do in CS2 and CS3, you can still do in 7.

Photoshop Forums
Planet Photoshop
Tutorialized

That guys is awesome, just watched his videos, he really spices things up a bit!
