Hey,

Could I set up a Virtual Linux File Server?

Using VMWare Server or VirtualBox, I might set up a Virtual Server that I will use to store and share files on.

Yes, same way as you set up any virtual server

I have used FreeNAS on a Virtual Machine and it's great!
