I want a Chess game for just me against the machine, with a few difficulty levels and an attractive (realistic) interface. I've found a couple, but they have either overly complex skins, or just downright ugly.

Anybody know of one?

i don't know specifically what you're looking for, but one that kicks butt is "chessmaster" on original nintendo. the reason it's better than the super nintendo version is, it's a light bulb icon (indicator that it's thinking) and yellow. very easy to recognize and the power of the moves the game makes against you, even at the lower levels, is awesome. it's very well thought out.
