Garlic Cookies
10 Cloves Garlic (Elephant Garlic is milder)
1/2 Cup Honey
1 Cup Margarine (Reduce this if going to add Honey to batter see below)
1 Cup Brown Sugar
2 Whole Eggs
1 Tsp Vanilla
2 1/2 Cups Flour
1 Tsp Baking Soda
1 Tsp Salt
2 Cups Chips (Chocolate or Butterscotch)
Drop garlic cloves in boiling water (cooking makes garlic milder and softer)
boil 5mi
Peal chop and soak in honey 20min
Cream marg/sugar/eggs/vanilla
Combine flour/bakingsoda/salt
Add to creamed stir in chips
Drain garlic & add to batter (unclear whether to add garlic or honey)
Blend well
Drop by TBLS on ungreased baking sheet
Bake until browned 375º Cool on racks
Note:Since the original directions did not clarify whether to add the drained garlic
or the garlic flavored honey after draining the garlic out--experiment!
Adding the whole honey and garlic mix makes a sticky softer cookie.

Ok, it's apple time where I come from so... bring on the apple pie... and make it snappy
For the pastry;
You'll need enough for a 8" or 9" two crust pie.
2/3 cups plus 2 Tbsp. shortening or just 2/3 cups lard
2 cups all-purpose flour
1 tsp.salt
4-5 Tbsp. cold water... I put ice in my water.
For a 8" or 9 one crust "pie;
1/3 plus one 1 Tbsp. shortening or 1/3 cup lard.
1 cup all-purpose flour
1/2 tsp. salt
2-3 Tbsp. cold (ice) water
Cut the shortening into the flour and salt until the bits of shortening are about pea size. Sprinkle in the cold water a tablespoon at a time. Toss with a fork until the flour is moist and it just stick together, but without being sticky. Divide it in half and then chill in the refridgerator for a half hour or so. Chilling the crust is important.
Now for the apples. Peel and core about 8 or 9 cups of apples. I know most people have their favorite types of apples they like to use. I use Cortland for baking. Always... lol. Cut them into slices and chunks. Add to that...
3/4 cup granulated sugar
1/4 cup flour
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg (sometimes I skip the nutmeg. I don't like it much LOL)
just a dash of salt...and stir it all up.
I like to also make a one crust pie too. I have to have a bit extra so I have enough for the edges. The kids like the left-over crust. I'll roll it out and spread butter, sugar and cinnamon over it. Then I cut it in strips and roll them up and make little cinnamon rolls with them. Yummy while you wait for the pie to bake.
But first finish the pie. LOL Roll out half the chilled dough on a floured surface. Get it quite thin. Then loosen it up and roll it onto the roller and unroll it onto the pie plate. Get it all smooth and poke a few holes in the crust.
Then roll out the top layer the same way. Put the apples in the pie plate and then cover it with the top layer. Cut vents in the top layer. OK, This is the hard part for me. Trim the edges and then seal it up. Sometimes it looks like a mess when I get it done. There won't be any left-over tho.
And that's how you make apple pie LOL OK now rescan with HjT and post a new log please.

Apple GoodieFor the topping:
1 cup quick oats
1/2 tsp baking powder
1/4 tsp salt
1 cup flour
1/4 cup shortening
1/4 tsp baking soda
1 cup sugar
1/2 cup butter or margarine
Mix it all together and set it aside. For the apples you need about 7-8 cups all peeled and sliced up. Add some sugar and cinnamon to your own liking. Bake it for 30 min. @ 350.

Easy as pie

Butter Mochi1 block Butter (not margarine)
3 cups sugar
1 box Mochiko Flour
1 teaspoon Baking Powder
1 teaspoon Pure Vanilla Extract
4 large Eggs
1 12oz. can Coconut Milk
2 Cups Milk (2% OR Homogenized is best)
Preheat oven to 350 degrees.
Soften the butter at room temperature, or put in the microwave for 30 seconds. Mix together the butter and sugar (low speed for an electric mixer). Then, add Mochiko, baking powder, vanilla, eggs, coconut milk, and regular milk. Turn the blender to medium (or high if there's no medium) and let the blender smooth out all the lumps. Pour into 9" X 13" baking pan. Bake at 350 for 1 hour.
TIP: Use a glass or foil pan to bake and use plastic knife to cut after it's cooled.

One of my favorites.
Fried Alligator
3 pounds alligator meat cut into strips
3 cups milk
1 cup mustard
Creole seasoning ("Slap Ya Mama" or "Ball's")
3 Eggs
2 cups flour
Oil for frying
Put flour in one bowl and season.
Put eggs in another bowl and season.
Soak meat in milk in refrigerator for about 2 to 3 hours.
Drain milk, season meat with Creole seasoning.
Add mustard and mix well.
Dip meat strips in egg mix and coat well.
Dip meat strips in flour mix and coat well.
Repeat egg and flour coating.
Fry for 5 to 6 minutes or until golden brown.

Who's hungry?!
Lasagne
1 lb. hamburger
1 tbsp. oregano
1 tbsp. dried basil
1 tsp salt
2 cups tomatoes
1-12 oz. can tomato paste
Brown the hamburger and drain it, then add the next 5 ingredients. Simmer uncovered for 30 minutes, stirring occasionally.
Cook 6 slices of lasagne noodles in salted water, drain.
3 cups Ricotta or cottage cheese
1/2 cup grated parmesan cheese
2 tbsp. dried parsley
2 beaten eggs
1 tsp. salt
1/2 tsp pepper
1 lb. Mozarella cheese
Combine the above ingredients, except the mozarella. Coat the bottom of your 13x9x2" pan with some of the meat sauce to prevent sticking. Place 3 noodles on top of that, cover with the half of your ricotta, then half of the meat sauce, then half of your mozarella. Repeat those layers. Bake at 375f for 30 minutes. Let it rest for 10 minutes before serving. If there is any left at all it will be even better the next day. I usually double this recipe so there will be left-overs. LOL!

Ok, looks like i'm really not alone here! I thought that cooking PC techs were a rarety! My lovely wife told me it was strange that a PC tech like me loves to cook. She has Pampered Chef parties for me so I can get stuff from them. We're having one in August! Last time we had one, we bought $50 worth of stuff, but the rep made $950 in sales. This meant we got LOTS of free stuff! I ended up with over $500 in new cooking toys! If you cooks out there have feiends who love to cook, I recommend you have one of these parties!

Ok for all you simple people like me who want something to eat in less than 3 minutes. You'll love this recipe.
Yano's BowlItems needed-Good sized Bowl
-Your favorite brand of Cereal (I prefer Cheerios)
-Milk
-Sugar (only if you like gettin' hyper....hehe)
-Spoon
To make Yano's Bowl, gently place the bowl on the counter and fill the bowl about 3/4 with cereal. Add a little bit of milk until your cereal starts to "float." Once it floats, add about 2 spoon fulls of sugar. (I prefer adding about 10, but thats just me). Now stir it all up gently, with your spoon.
ServingServes: 1 (depending on how many bowls you have)
To serve cereal just place the bowl on the table and sit down and use your spoon to dip up a nice size amount of cereal and place in your mouth and enjoy.
This is one of my all time snacks at night and breakfasts.

Banana Bread
The ingredients:
1/2 cup of margarine - 1/2 tsp of salt - 1cup sugar - 1 tsp baking soda -
2 eggs - 2 ripe bananas, mashed - 2 cups of plain flour
1/4 cup of nuts chopped
Cream the butter and sugar. Add the eggs. Add the flour, salt, soda, and mashed bananas. Mix well and then pour into a greased loaf pan. Bake at 350 for about 45 minutes.

Spring ~ Peach ~ Pear ~ Dream Pie
1 Package (8 oz.) creme cheese
1/4 cup peach or apricot preserves
1 1/4 cups frozen whipped topping (thawed)
1 (9 in.) graham cracker crust
1 can (15 1/4oz) sliced yellow peaches (drained)
1 can (15 1/4 oz) sliced pears (drained)
1. Mix together creme cheese and preserves
2. Fold in whipped topping, spoon into pie crust
3. Arrange fruit attractively on top
Chill at least two hours or overnight.
Garnish with mint sprigs and additional whipped topping, if desired.
Prep time: 10 min.
Chill time: 2 hrs. or overnight.
8 servings
To make this a healthy dessert. This can be done with lowfat graham crust, low fat/lite whipped topping, fruit in its own juice, & low sugar/sugar free preserves.

Coconut Cream Pie _ Oh Baby!
1 can large cream - 3/4 cup of water - 3 cups of sugar (for every 1 cup mix in 4 tbsp flour) - dash of salt - 1 stick melted margarine - 2 tsp vanilla - 7oz pkg of coconut - 4 eggs - 2 deep unbaked pie crusts.
Blend cream, sugar, flour, melted margarine, eggs, water, salt, and vanilla. Then mix together with the coconut. Fill the unbaked pie crusts and bake 1 hour at 350.

Chocolate Irish Whiskey Cookies
1 stick butter (softened)
1/2 cup brown sugar
2 tablespoons Irish whiskey
1/4 cup heavy cream
1/2 cup semisweet chocolate chips
1/4 cup flour
1/4 teaspoon each baking soda and salt
1 cup quick oats
1/2 cup toasted pecans, coarsely chopped
Preheat oven to 350*F. Liberally grease and flour cookie sheets. Cream butter and sugar until light and fluffy. Beat in 1 tablespoon of the whiskey. Heat cream to boiling in small pan. Reduce heat and stir in remaining whiskey. Let simmer 3 minutes Remove from heat, and stir in chocolate chips until blended and melted. Add half to butter-sugar mixture. Sift together flour, baking soda and salt. Stir into butter mixture. Fold in quick oats and pecans. Drop rounded teaspoonfuls 2 inches apart on baking sheets. Bake 8 minutes. When cookies are cool drizzle remaining chocolate-whiskey mixture in crisscross lines across tops of cookies. Makes about 24.

Caws-Wedi-Pobi (Welsh Rarebit)
Probably the most well-known of all Welsh snacks although if you were to look it up in Fowler's English usage you would see that it claims that the dish is not of Welsh origin, there is no rabbit in it and the toast is not rare. Full marks to Fowler's for splitting hairs, or is it hares?
Ingredients:
· half a pound of cheese, grated
· 1 tsp. dry mustard
· 4 tbsp. milk
· 4 slices of fairly thickly sliced bread
· 1 tsp. butter
· 2 tsp. Worcestershire sauce
· salt and pepper to taste
· 2 tsp. flour
· 2 tbsp beer (optional)
· tomato wedges and parsley, to garnish (optional)
Cooking Instructions:
1. After or while toasting the bread, heat the grated cheese gently in a saucepan until it melts
2. Stir in the other ingredients
3. A little beer can be added to the sauce if desired
4. Pour the cheese sauce over the toast and place under a grill until a golden brown
5. Garnish with tomato wedges and parsley

Once sauce has been cooking till smooth add shrimp, crawfish, and crab meat cooking for about 7 to 10 minutes or till shrimp are pink. As the cook you can sample

When salmon and sauce are done, place the salmon on a large plate with pasta or rice next to it. Ladle sauce over salmon and pasta or rice. serve with bread of choice (I like the Texas Toast).
This should take 45 mins. to fix, if the ingredent are ready to use.
Serves...alot.

I have more. But you will have to wait. A tip thought. Instead cooking your turkey at 425° , reduce it to 300°. 10lbs @ 300° for 5 hours. I only use 3 cups of orange juice in a covered pan for 4 hours then uncovered for 1 hour. The white meat will be as moist as the dark. You can't burn it either. I left one on for 7 hour so I could go to mass. It just got better.

Pork Loin with Sherry and Red Onions
Ingredients:
3 large red onions, thinly sliced
1 cup pearl onions, blanched and peeled
2 Tbs unsalted butter or margarine
1/2 tsp salt
1/2 tsp black pepper
2 1/2 lb boneless pork loin, tied
1/2 cup cooking sherry
2 Tbs Italian parsley, chopped
1 1/2 Tbs cornstarch
2 Tbs water
Directions:
In a medium skillet, saute the red onions and pearl onions in the butter until soft. Season with salt and pepper. Rub the pork loin with salt and pepper and place in the slow cooker. Add the sauteed onions, sherry and parsley. Cover; cook on Low 8 to 10 hours or on High for 5 to 6 hours. Remove the pork loin from the stoneware and let stand 15 minutes before slicing. Combine the cornstarch and water and add to the juice in the stoneware to thicken the sauce. Serve the pork loin with the onions and sherry sauce.

Monkey Bread
Ingredients:
*2- 7 1/2 oz. Tubes of refrigerated buttermilk biscuits (about)
*1/2 Cup sugar, granulated
*1 tsp. cinnamon
*1/2 Cup Brown sugar
*1/4 Cup + 2 tb. butter or margarine
Instructions:
1. Preheat oven to 350 F.
2. Cut each biscuit into quarters.
3. Combine the granulated sugar and the cinnamon together in a small bowl.
4. Dip the biscuit pieces into a well greased tube pan.
5. Melt the brown sugar and the butter or margarine; do not boil. Pour over the biscuit pieces in the tube pan.
6. Bake in a preheated 350 F oven for 25 - 30 min. Do not let them burn.
7. Cool and turn over, upside down on a plate. Tear off pieces to serve.

Pumpkin Bread
Ingredients:
*1 3/4 C. flour
*1 tsp. baking soda
*1/4 tsp. salt
*1 tsp. cinnamon
*1 tsp. nutmeg
*1/8 tsp. ginger

*1 1/2 C. sugar
*1 1/2 C. oil
*2 eggs
*1/3 C. water
*1 cup canned pumpkin
Instructions:
1. Preheat oven to 350 F
2. Combine dry ingredients in a large bowl, and make a well.
3. Combine the liquid ingredients in a medium bowl, and pour into the well.
4. Mix at medium speed for about 1 minutes until blended.
5. Pour into 2 - 3 medium sized greased loaf pans, and bake at 350 F for about 45 minutes.

EGGNOG RECIPES

Basic Non-alcoholic Eggnog
12 eggs
1 1/2 cups sugar
1 quart cream
to taste vanilla
dash of nutmeg
Seperate eggs at room temp. Beat yolks till creamed with about half of sugar, whites till peaked then add other half of sugar. Beat cream till stiff. Then fold all together.
Add vanilla to taste - but remember that a little bit of vanilla goes a long way.
Place into containers keep in refrigerator for at least one day. Shake before serving.

Orange Non-alcoholic Eggnog Float
4 eggs
6 tablespoons sugar
5 1/2 cups fresh orange juice, chilled
1/2 cup lemon juice
1 quart vanilla ice cream
1 quart ginger ale, chilled
Beat the eggs and the sugar until light (no separation necessary here). Stir in the orange and the lemon juice. Place small scoops of ice cream in the punch bowl. Pour
the ginger ale against the sides (inside, of course) of the bowl (this is done to preserve as much of the carbonation as possible). Add the orange juice picture slowly,
stirring gently. Serve immediately. This will make about 30 servings.

1 3 oz package of French Vanilla Instant pudding
1/2 cup sugar
2 tsp vanilla
1/2 tsp of nutmeg
In a large bowl, mix the pudding with 1 cup of the milk. When pudding is formed, add in the remaining ingredients and mix very well. Chill.

6 Large eggs
3/4 c Sugar
1 1/2 c Brandy
1/2 c Rum
4 c Milk
4 c Cream
1/2 c Icing sugar
Nutmeg to sprinkle
Separate the yolks from the whites of the eggs. Beat the yolks slowly while simultaneously adding the sugar; do this until the mixture is pale and golden. Now slowly
add in the brandy and rum, then beat in the milk and half the cream.
Set aside until just before serving, then whisk the egg whites until stiff and fold them into the eggnog mixture. Whip the remaining cream and icing sugar until thick. Top
each glass of eggnog with whipped cream and a shake of nutmeg. This yields eight servings.

Basic Versatile Nog
6 seperated
1 cup sugar
1 1/2 quarts thick cream
1 1/4 tumblers whiskey, brandy or rum
Dashes of cinnamon or nutmeg
Beat egg yolks and sugar together until they are senseless (or lemon-colored). Set aside while you beat the egg-whites stiff followed by some harshly thrashed cream.
Dump all this into the yokes along with your choice of liquor. Then chill.

Wassail (not a NOG but with egg)
Wassail was originally not a drink, but a practice of carroling. In Merry old England carrolers would bring a cup with them, and, as they sang before the homes of wealthy
citizens, their mugs would be filled with a hot spiced ale, often with a roasted apple slice floating in it.
This recipe is a variation on that ancient theme.
1 bottle burgundy or claret
6 eggs
1/2 cup water
1/4 teaspoon nutmeg
2 cloves
1/2 teaspoon ginger
1/2 teaspoon mace
1/2 teaspoon allspice
1/2 teaspoon cinnamon
2 cups sugar
6 baked apples
Heat the bottle of red wine. Meanwhile separate the eggs. Beat the yokes and whites separately, then fold both together (egg whites should be stiff). Put spices in
water and heat for afew minutes to release flavor.
Now pour all into a punch bowl along with baked apples. Serve warm.

Title: Kitty Litter Cake
Ingredients:
CAKE INGREDIENTS
1 box spice or German chocolate cake mix
1 box of white cake mix
1 package white sandwich cookies
1 large package vanilla instant pudding mix
A few drops green food coloring
12 small Tootsie Rolls or equivalent
Directions:
SERVING "DISHES AND UTENSILS"
1 NEW cat-litter box 1 NEW cat-litter box liner 1 NEW pooper scooper
Prepare and bake cake mixes, according to directions, in any size pan. Prepare pudding and chill. Crumble cookies in small batches in blender or food processor. Add a few drops of green food coloring to 1 cup of cookie crumbs. Mix with a fork or shake in a jar. Set aside.
When cakes are at room temperature, crumble them into a large bowl. Toss with half of the remaining cookie crumbs and enough pudding to make the mixture moist but not soggy. Place liner in litter box and pour in mixture.
Unwrap 3 Tootsie Rolls and heat in a microwave until soft and pliable.
Shape the blunt ends into slightly curved points. Repeat with three more rolls. Bury the rolls decoratively in the cake mixture. Sprinkle remaining white cookie crumbs over the mixture, then scatter green crumbs lightly over top.
Heat 5 more Tootsie Rolls until almost melted. Scrape them on top of the cake and sprinkle with crumbs from the litter box. Heat the remaining Tootsie Roll until pliable and hang it over the edge of the box.
Place box on a sheet of newspaper and serve with scooper. Enjoy
Number Of Servings:will someone really ask for a serving but it looks like it would feed alot!!

The Diva Salad You need:- Iceberg/green Coral lettuce,
- Tomatoes,
- Onions,
- Cheese,
- Olives,
- Lemon,
- Salad cream/dressing
- Bread
Steps:- Chop Iceberg or green Coral lettuce
- Add chopped Tomatoes, onions, cheese and olives
- A squeeze of lemon
- Finally add salad cream or dressing of choice
- Serve with bread

The Kahlua has to age for 2 mos. and the cherry vodka for one year! I haven't made them yet but I'm going to get around to it one of these days.

Chocolate Syrup
1 c. cocoa
1 and 1/2 c. sugar
1 c. hot water
1 tsp. vanilla
1/2 tsp. salt
Mix together and boil for 3 minutes. Store in airtight container.

Sweetened Condensed Milk
Mix 1 c. Carnation or Pet milk with 2 c. sugar and cook slowly down. This will make the thick sweetened condensed milk used in recipes such as Cherry Cream Cheese Pie.
hmmm....I better check with grandmother if that's supposed to be one cup or one can of the milk...

Poor mans Parmeisan Chicken
2 pounds of chicken breast (5 to 6 fillets)
1 32 oz. jar of Preigo Thick & Chunky
6 fresh Roma tomatos
1 can of Kraft graded parmeisan cheese
½ teaspoon of Tony's Italian Seasoning (Perosnal favorite)
Dash of salt and pepper
20 oz of angel hair pasta
Over sized pan to bake in.
Lay chicken in pan. Season with salt & pepper, then cover with ½" of Parmeisan Cheese.
Pour Preigo around the chicken. till the chicken is haft covered in the sauce. Do not pour over the chicken and wash cheeze off.
Slice the Roma tomatoes ½" thick and lay on top of the sauce, but not the chicken.
Bake uncovered at 300° for 80 minutes (1 hour and 20 minutes).
Serve over pasta.
Remember not to over cook the pasta. It is important to run tap water over the pasta to stop the cooking process.
Serves 5 to 6

Cool!! The Amaretto one doesn't sound like it's going to taste like the Amaretto from the liquor store....don't know. But the other two sound good. I AM going to try making them one of these days so if you get to it anytime soon, let me know what you think!
Kahlua1 qt. water
10 heaping Tbsp coffee (not instant)
3 c. sugar
Bring ingred. to boil. Simmer 1 hour. Let cool. Pour in 1/2 gallon bottle (dark).
Add 1 to 2 Tbsp vanilla (pure), 1 qt of vodka.
Age 2 months. Filter out coffee grounds.
Cherry VodkaFill a 1 gallon jar half full of fresh cherries. Add 1 c. sugar and 1 fifth of vodka (100 proof). Put on lid and store one year.
Amaretto3 c. sugar
3 c. water
5 c. Instant coffee
Bring ingredients to a boil. Simmer 15 minutes, stirring constantly. Put pan in cold water in the sink and cool. Add 1 qt. vodka and 1 fl. oz almond extract.
Drink up!!
If anyone tries any of these, please post how they tasted!!

- Add butter to taste.
NOTES:- The recipe above is for one slice of toast. If two slices are desired, double the recipe.
- You can change the amount of toasting done to your bread by moving the selector to a higher or lower setting. (This selector is found on the front of most toasters).
- You may also choose to add more toppings, such as jelly or sugar. Feel free to experiment!
- I have found it best to remove toast from toaster before applying butter, or at least unplug the toaster beforehand.

Ok this is when paddy irishman gets involved.
The dreggs cocktail.
Ingredients:
Take all the almost empty glass from your friends and mix them up togeather. (beer vodka stout wine whiskey etc)
Sip for best flavor .
Be close to bathroom in case of reaction
On a more serious note,
Some people put blackcurrent trhu Guinness, personally i think its sacrilidge...but if puts a "nicer flavor" for some people
Add Brandy and Baileys cream licq togeather, quite nice too.
For those of you under 21 years of age(or 12 if you live in ireland
). Ignore the above. You shouldnt be drinking.

Stuffed French Toast, For 2
Made this yesterday morn for my honey. UMMM good.. Got it from Rachel Ray
1 firm, ripe banana
3/4 cup half-and-half
2 large eggs
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
4 (1-inch thick) slices day-old challah or brioche
2 tablespoons unsalted butter
Confectioners' sugar for dusting
Accompaniment: Warm maple syrup
Cut banana into 1/4-inch thick slices. In a bowl, whisk together half-and-half, eggs, vanilla, cinnamon, and nutmeg. Cut bread slices horizontally almost in half, leaving 1 edge intact. Stuff each pocket with 4 to 6 banana slices (do not overstuff). In a baking dish just large enough to hold bread slices in one layer, arrange slices and pour custard over them. Soak slices, turning them over once or twice to allow bread to absorb all liquid, about 15 minutes.
In a 12-inch non-stick skillet melt butter over low heat until foam subsides and cook slices until golden, about 5 minutes on each side.
Dust French toast with confectioners' sugar and serve with syrup.

MONKEY BRAIN
Legends have traditionally been passed down orally and it is no different with the Live Monkey Brain legend.
The following is the universal recipe for this legend:
Take one (1) living monkey. Just eating monkey brain stew is not particularly interesting or shocking.
Strap beneath special table with hole in center. The monkey must be strapped beneath a table with its head poking up through a hole.
Bop monkey on the head, scoop and serve. The diners usually deliver the fatal blow themselves with hammers, the skull is sawed off and the brains are scooped out with spoons
I may add that this is more or less practiced in asia, the monkey needs to be alived or just killed in order to keep freshness.

Basic Elephant Stew1 elephant
50 lbs. salt
25 lbs. pepper
2 rabbits
Cut elephant in equal small bite size pieces. This should take about 2 weeks.
Add enough brown gravy to cover. Add salt and pepper to taste.
Cook over kerosene stove about 4 weeks at 465 degrees.
This will serve about 3800 persons. If more are expected, add 2 rabbits.
But do this only if necessary, as most people do not like hares in their stew.
