When I select Disk Clean up, (Start\All Programs\Accessories\System Tools\Disk Clean Up) I find "Office Set up Files" and "Compress Old Files" un-checked. My question, is it safe to check and delete these?

As far as compressing old files, it is up to you. Note that checking this item will not delete the files -- the files simply will be compressed/compacted to use less disk space. When such files need to be read, they will be decompressed automatically, which does take a small amount of extra processing (i.e., time). I prefer NOT to compress old files, but the choice is yours.
